I did a ESPHome + HA AddOn based AI Art Gallery setup. Fully local, fully tinfoil, no internet. Was a lot of fun over the last year to get everything working. I wrote a guide on each of the steps.

That's really cool!!! I'd been thinking about building something like that myself - not so much the AI side, but I'd love a black and white photography eink frame - but hadn't dug into the nuts and bolts of it yet. Thanks for providing a ton of info to look into.

I was thinking of building one around the bigger waveshare panels that support 16 greyscale tints

Thanks Guy. Please note that the one we used in thoery has greyscale, as in black-grey1-grey2-white. But, the greys were so dark that it pretty much looked black from a bit of distance

But, we spend a lot of time looking at dithering, and even with low resolution e-ink, with dithering it looks very grey
