I got a few Sandstrom Smart Plugs from Curry’s
Added as a matter device one via HomeKit on phone and other via Echo Dot 2nd Gen. they both show up in home assistant but do not show any form of power monitoring. Any ideas?

I'm not 100% certain of this, but AFAIK energy monitoring isn't part of the matter spec yet for smart plugs. The energy monitoring may only be available through the manufacturer's own app.
Here's what the matter 1.4 spec documents as cluster requirements for on/off plug-in units (smart plugs).
