I was thinking about Home Assistant Cloud and I think the single biggest win would come from end to end encryption and authentication of control traffic. This means that the cloud servers would only relay encrypted data between the on-premises Home Assistant and the clients. They would not have access to the contents of that data and would not be able to inject their own commands.

Is this something feasible to implement?
