As far as I can tell the Home Assistant Yellow only supports Zigbee. Is there anything I can add for Z-Wave and/or Matter support?

The Yellow can also be used with Z-Wave GPIO HATs like the Z-Pi 7.

Just keep in mind that using a gpio hat will limit your upgrade options if you decide to move on from the Yellow. In most cases you’d need to migrate to a different zigbee/zwave/whatever coordinator.
