Hiya there! First time here, as I'm currently in the planning stage of the HA implementation in my home. Hoping someone can point me in the right direction with a big doubt I'm having.

Due to how the cables installation at my home were made, I have a cabinet right at the middle of the house where all ethernet cables meet (1 from the living room where the router is, 2 to each room). I'm installing a switch there, of course, and also putting a N100 based miniPC that'll house HA there. Problem is, there's no power outlet to be found anywhere nearby.

I thought about adding a PoE injector after the router in the cable that goes to the cabinet, then have a PoE powered switch there which would also pass power to feed the miniPC, and also connecting the 2 other cables to the rooms (not PoE).

I have an internet connection of 10Gbps and cat6 cables so the switch would have to support those speeds too.

Is this feasible? And is there something with just enough ports for my needs that don't break the bank?

Not really no

Your selection of poe capable of powering a switch and a mini pc while also doing 10gbit over those ports, that's a bit of a unicorn both in terms of availability and pricing

Yeah you could do the switch but not the mini PC, maybe the switch and an SBC but I think that's about it

I hate patching drywall as much as the next guy but would this be the time to pay an electrician to bring power into where you want to locate HA?
