What you configured as 5 min is how often it will update when the app is open, not in background.
In background the app won't run continously, it has windows of opportunities decided by iOS so we can report sensors, we also work around that with location updates and other small tweaks to increase these windows, but it's definitely not realtime.
Also, if your phone is in low power mode or bad connectivity, this may reduce these windows.

No it's not something we can configure. What you can do is to enable "local psuh", which is an unrelated feature that has the side effect of improving the sensors reporting.
Companion App settings >> Your server name >> Internal URL >> define your wifi SSID >> enable local push toggle
