#Can I successfully run HA with 1-2 devices alongside Apple Home?

This is an ask-in-advance to see if it would actually be worth my time. I have a bunch of HomeKit devices all working through Apple Home. I have a FlashForge Adventurer 5M printer and folks have connected them to HomeAssistant. I have a Radxa X4 which I'm setting up with pi.hole in Docker to replace an existing Raspberry Pi, and I want to run HA on it in Docker as well to manage this one device. It is imperative that this new functionality not interfere with the existing Apple Home setup -- I don't mind not being able to see the printer in my Home app and I'm fine having to run an HA app to see the printer, but I am unwilling to mess up the system I've worked to configure to the satisfaction of my fellow users. Bonus points if the HA install can collect data from some of the devices (stuff like temp and humidity from Eve Room and HomePods) but that's for the future.

HA will only interact with the HomeKit devices that you add to it

#

it will have no impact on your existing HomeKit infrastructure unless you explicitly ask HA to expose devices to HomeKit, and it won't interfere with any HomeKit devices that are already paired with some other device

Okay, that sounds like yes it won't break things (yay) but no I can't graph that data unless I shift the devices from HomeKit to HA (which I could do for the Eve Rooms but not the HomePods).
