#"Best" way to integrate HomeKit devices in Home Assistant

I'd need some general advisory on what approach to use in my case, please. I have Home Assistant that controls most of my devices (Zigbee mostly, etc.)
Additionally, I have a heating device (Eve Thermo Control and Eve Thermo, fwiw) that I've joined directly to HomeKit using Matter. My Router is an Apple TV.
I've exposed my HA devices to HomeKit via the HomeKit Bridge.
I now want the opposite: I'd like the heating devices be present in Home Assistant as well.

So: how do I do that best? Is the section "Adding a HomeKit device via Apple Thread border router" the right way, kinda since this already happened?
Since the first step says

Remove the HomeKit device from the Apple Home app
, wouldn't it move the responsibility away from Home?

I'm especially curious since the Thermo Control does some black magic binding things via their app in order to let the Control sensor actually control the heating thermostat actor…

So, y'all have any advice and maybe experience about the pros and cons?

These are Matter devices, they can be added to HA at the same time as Apple Home

by simply pairing them again or do I have to consider something special?
