How do I do this? I have a switch that controls something that is always on, so the on/off naming scheme doesn't quite work for me. Is this a template thing? A YAML thing? Thanks!

You can't change the states of a switch.

theres no way to define that "on" = "left" for display purposes only?

Hmm not for that entity. You can make another entity that has state of Left/Right.
