ZFS. Skip the fake or HW RAID.
And in the irst menu in the bios it says that the drives aren't in raid.. But they should be?
Please share what you see. That's probably the mainboard's Fake RAID I was talking about. You do not want that. ZFS is handling that now.
For frigate I'd recommend a LXC. You can easily share your iGPU with it if you have one and still use it for the node itself.
For nextcloud you can use a LXC too or run it as an addon but I think HAOS makes for a very poor NAS or general purpose system.
I'd only run things as addon that are strongly related to HA or help you with managing it. Code Server, SSH, mosquitto, SAMBA (not as NAS), whisper, Node RED, etc are very reasonable for example. Adguard, Grocy, Bookstack, Uptime Kuma, etc are not. Just my opinion of course.
Since you now have the ultimate freedom you also have the ultimate choice and that can be hard, I get it. I often suffer from analysis paralysis.
