I've followed the official guide at: https://www.home-assistant.io/voice_control/create_wake_word/

INSTALLING THE OPENWAKEWORD ADD-ON - section 3 seems slightly incorrect as there was no Configure and Submit options, just an Add or Ignore button.

After adding the openWakeWord & Wyoming protocol, there is no 'Wake word' option under my voice assists.

I have Home Assistant Cloud configured

Home Assistant

What you're using as satellites?
The method you're describing is made for on-server wake word, which is using OWW. Modern voice satellites like PE or Koala, use Microwakeword, that sits on device, to avoid constant audio streaming to the server. There's no good way to make custom wake word for Microwakeword (although there is some work in this field).
