what kind of switch do you have? Note that zigbee devices like philips hue lights should be left continuously on to maintain the zigbee mesh even if not lit, so the recommendation would be to use some sort of zigbee smart switch with "smart light" mode (leaves devices powered), or otherwise get a zigbee remote to use to control the light.
then you could use home assistant automations to take care of changing the brightness/color of the light depending on the time of day when the switch/remote buttons are pressed.
