I currently have a Nest. I do not enjoy it very much, and I want to replace it. Reasons are:

Best combination you can get of 1 & 2 is probably an ecobee that supports homekit. I'm loth to recommend them because they're generally local-unfriendly/cloud required, but they do work local with the homekit controller.
I like some Z-Wave thermostats as well for reliability but they look like they were manufactured in 1980 😂

I'm gonna be honest and say that I've been eyeing the EcoBee... I don't think I've needed to setup the Homekit Controller. Do you have it? I'd love to see a screenshot of the exposed controls of the EcoBee through it

How "pretty" does it have to be? I really like my pearl from Centrlite, super reliable, 100% local and works as a dumb thermostat too incase HA is down

You could always get a simple thermostat and then make a nice dashboard with thermostat built in somewhere else

I just recently decommissioned by doorbell chime (for a Reolink chime) so I could theoretically mount the thermostat behind it's cage

I say get simple one and then make her a tablet dashboard and mount it right next to the thermostat with weather forcasts and all sorts of other "useful" stuff 😛

I'll go venture a guess that if she doesn't want an ugly thermostat, she also doesn't want an ugly thermostat AND an ugly tablet stuck right next to it 😛
