#Is there an off the shelf solution to control a Noctua NF-A12x25 or similar fans?

I have a small ventilation shaft that is currently providing passive ventilation for a small room that I am working from. I am looking for a fan that I can place right at the entrance of the ventilation shaft to speed up the ventilation and air circulation given that co2 concentration increases very quickly during my work day.

I have a HA yellow that I am using currently to control things like lights, etc. and want to use it to also start/speed up/ or stop the fan. I have automation between the lights and my webcam turning on, I am thinking about using the same automation to ensure the fan is slow when I have a conf call and maybe faster when I am not in the room, etc.

Looking at https://www.home-assistant.io/integrations/fan/ I see that it provides the integration points, but I do not know where to look to buy a fan that I can use this integration to then control.

That's a DC fan. You can build with espHome or other means a controller. There might be a controller out there for it, probably is but I don't know one. That is the device you will need to integrate and it could possibly be controlled by that integration or possibly the MQTT fan one.
If you are looking for simple on/off, no speed control a smart plug and a wall-wort power supply that will run the fan is an easy way to go.

The Noctua probably has PWM built in so maybe an ESP chip and a little espHome is just the ticket there.
