I'm running HAOS on an rpi 4 booting from an SSD. So what would I need to do to run on an rpi5? I'm guessing it's more than just unplug the USB and plug it into the rpi5?

You have the OS for the Pi 4 on the SD so that won't work (or won't work well).
Make a full backup. Setup the Pi5 with HAOS for Pi5, preferably on a new SD. Restore backup.
