I'm a bit confused about how the Tuya devices work with Home assisant.

I've found this page which seems to suggest I can add Tuya devices to my Home Assistant. What I'm not clear about is whether if I add devices through home assistant they're controlled by my local network or if they're still remotely connecting to the Tuya servers.

Is there a way for me to bypass the Tuya/Smart Life app?

What happens in the future if Tuya goes fully out of business and I need to reset one of these devices?

They're all Zigbee devices and I've got an official dongle.

If they are zigbee, join them to a ZigBee coordinator and use ZHA or z2m, no Tuya anything required. This assumes they are supported, they don't follow standards so there are gaps.
