I posted previously with my initial simple_pantry but this went to flop, so I decided to start again and (heavily) relying on GPT I got something that's working and stable.
I introduce to you the Pantry Tracker - https://github.com/mintcreg/pantry_tracker, this allows you to save products and assign them categories to be imported into HA.
(I have made a seperate integration to support this along with a lovelace card to be able to display the data)
