I finally figured out how to get my nodes into zwave is ui. I’m still unsure how to configure my three ways, which are two zen72 switches on each end because I want to dim on both ends. I’m coming to HA from SmartThings and it was very easy to create associations there. Doesn’t seem that easy here. Can someone help me with what to do to get my associations working?

"set parameter 7 to 11"?
That’s correct. I did press the lower paddle 4 times just in case I didn’t have that new parameter. It flashed green twice, so not the three times it was saying. The parameters zooz are talking about don’t match up with the parameters in the JS UI
Do I need to create the association in groups in JS UI?
Well Z-Wave JS makes it easier, just that Zooz's instructions are not that great.
Just turn off "Send Status Change Report: Z-Wave", the rest of the status reports should be on.
The option "with direct association" does indeed require adding the associations, no skipping that
What's interesting is that depending on your ZEN72's firmware version, there's a 4th group "Remote Dimming", which I haven't found documentation for.
Do I turn that option off on the remote side or on the load side? So you’re saying I do need create the associations in groups? What are the correct options I need to get my three ways working?
The guide tells you that, no?
Main dimmer (connected to load): no changes in settings
Remote dimmer: set parameter 7 to value 1
Set direct association for Group 3 only, adding the device ID's for other dimmers in the group. So if dimmer A is your main dimmer and dimmer B is your remote dimmer, add dimmer B to Group 3 on dimmer A and add dimmer A to Group 3 on dimmer B.

Makes sense. What’s the best way to “hide” the remote dimmer?
