I switched from manual tracking with an IR Sensor and Mqtt to a device by a company specialized for this smart meter reading (tibber). How can I preserve my previous entities data in my energy dashboard and use the new tracker for new data?

Easiest thing to do is just leave the old entity in your energy settings, and add the new one as a separate entity.
