is there any way to stop my motion sensors, sensorsing pets, animals, bushs etc

And also its really annoying when it keeps giving me alerts while im sleeping.

What kind of motion sensors? Typically the answer is not really. Placement of the sensors is key to avoiding detections of things like that.

For the second part, conditions in your automations will take care of that.

Depending on the sensor there may be a sensitivity setting either jumper or software setting, if not then as stated restrict the time for the notifications

For the most part No. I gave up on motion sensors too many late night false alarms.

I've a PIR sensor hooker to an ESP8266 running esphome.
Somehow it gives a false positive every hour at the exact same time. What could be the reason?

Do you have any hourly functions that run and may draw high current, like wi-fi logins etc.? They may cause a slight momentary voltage drop on the sensor making it "think" there was a detection ? May need a cap to prevent dropouts

most PIR sensors have a sensitivity adjustment - make it less sensitive but then it may not trigger until the subject is closer. Other than that there is not much you can do except add other logic/sensors for more confidence. There is no reason to be interrupted in your sleep if you don't want to. Just set up your automations to mute during nighttime. I would still recommend logging the event however.
