I want to give access to my father to a single dashboard, while other users keep access to all the dashboards. Is there any easy way to do this?

If you go into edit view and then visibility you can hide/show views for specific users

isnt there a way to hide/show a whole dashboard? I have two houses connected to this homeassistant, and one dashboard for each house

you can hide one dashboard from the sidebar and make the other one default on a device, but i don't think there is a per-user setting for this on the ui

The dashboards itself can just be set to be admin-only. Not on a user basis (except being hidden by the user itself).

I thought the recommended method for 2 houses is 2 instances of HA?

you just set up 2 separate servers and you can switch between them

from the side bar > hit settings > dashboards > "open" on the dashboard you wish to limit the view of

This just opens the dashboard for you to view

now hit the edit pencil in the top right corner of the dashboard. once in edit mode you will see a pencil next to the title of the dash board and another one next to the icon use for the card (you can have multiple cards on a dashboard) hit that pencil next to the icon.

Ths will open the view configuration window. Select the last tab titled "visibility". Here you can toggle who can and can't see this card.
