Probably something ESPHome/MQTT based is your best bet - something like: https://www.thesmarthomehookup.com/5-diy-wireless-mqtt-smart-home-window-sensors-updated/ - but tbh that's a whole lot more work than a skyconnect and off the shelf zigbee sensor and you'll either need to be clever about the battery life or mains power it
Why would you specifically like to avoid using another stick? Zigbee and Thread are low-power wireless protocols. Without them, you'd be stuck with WiFi, which isn't very useful for battery-powered sensors.
Technically, your WIFI hub is a coordinator, same with Zwave dongle, zigbee dongle, rf433 receiver, and lora receiver. You would have to hook hard wires back to your PI or motherboard to do that without a coordinator...
Door Window sensors are tough - cause typically you have a LOT of them. Then you end up changing batteries a lot.
