I’ll be setting up home assistant in my new house soon (first time haas user - long time IT, Networking and programming engineer)

I’m hoping to replace my Amazon Echo devices with something that uses Assist instead for voice control of my haas devices.

Are there any products out there yet that I can just plug & play or am I better just using haas cloud for now?

there's a HA voice satellite in the works, but it's not out yet. 🙂

As far as STT/TTS, you can use the HA cloud, or if you do a bit of googling you can figure out how to run Wyoming faster-whisper in docker with GPU acceleration, and run Piper for TTS on a system with a strong/fast CPU

Looking to run HA on my home coolify server. That way I can manage things like mqtt etc as separate containers.

Unfortunately it doesn’t have a n nvidia gpu 😕

I was considering switching my 3 home servers over to a k3s cluster but tbh not sure I can be bothered with everything else going on right now.

You can use NabuCasa STT/TTS instead. Works great. GPU needed mostly if you want local STT over Whisper, and definitely required if you want to use local LLM.
I use STT from Nabu, and Piper for TTS - it runs well on i5, no GPU required.
