There are references to the Home Assistant SkyConnect supporting Matter/Thread with a future firmware version but I can't find any timeline for when this will happen.

Does anyone know?

The docs suggest this is already possible: https://connectzbt1.home-assistant.io/procedures/enable-thread/

Which is a nice surprise as the product/sale pages I've seen suggest it will be supported in the future

It supports matter/thread already. But it doesn't support it simultaneously with zigbee.

Can I buy two of them and use one for matter and one for zigbee?

Yes - one for zigbee, one for thread works perfectly fine. a number of people here do that (or using similar dongles, there's a few different vendors)
