I notice that my sensors (mostly temperature sensors) only show values on graphs in 5 minute steps. I have checked for some BTHome temp sensors, lux values of motion sensors and my shelly devices temp sensors. When scrolling through the history graph the dot only show values exactly 5 minutes apart. I would like some sensors to update more frequently. I am not sure this is a dashboard issue or related to something else, but could not find a fitting categories.

More than likely this would be a limitation of the sensor itself, especially if the device is battery powered as a means to conserve power. Some devices may allow you to set the reporting interval but I don't think that's very common.
You might consider some DIY ESP32 temperature sensors. A little bit hardware and some programming and you can create exactly what you want. Lots of tutorials available out there.

What he says. It’s common with battery based sensors. My hue sensors do the same thing. But my FP2 hooked up to power. Or the switch sensors on usb update immediately. Sensors wired to power is probably what you need to look for.

Thank you guys! After a few hours of trying different sensors, update intervals, connections and all kind of settings, I noticed that the sensors in fact transmit data more frequently, but the overview card only shows data points every 5 minutes. Once I clicked on show more and looked at the history, I could see that the sensor send data more often. I should have tried that first...🤦

Yes what you're seeing there in the more-info is short term statistics, which are compiled every 5 minutes.
