Ok I made some progress. I downloaded the latest backup and went through the DB and found all the values in the states_meta table. The cuprit was this config that I added a few weeks ago while I was troubleshooting and then forgot about:

device_tracker:
  - platform: bluetooth_le_tracker
    track_new_devices: true

So that's where all the entities came from. I removed that from my config but now I need to figure out how to get rid of the leftover entities in HA.
