any ESP32 will work fine for mic only, if you are using Openwakeword for example. if you wanted to use on device micro wake word then an ESP32 S3 with PSRAM , if you wanted to keep it nice and small then the ESP32 S3 Zero and an inmp441 mic is very small and even in a printed enclosure is around 2/3 smaller than the M5 stack Atom echo
