I have ESPHome Voice Assist device working.

I can use it for light, fan, and limited sensor values

The only sensor that work are Temperature and Humidity

I think this is because the Voice Assistant for only those sensors

I want to hear readings from various, like Voltage, or AQI, but none of them work.

Make sure they are exposed to Assist, in the entity settings, and that you're asking about them by name or alias

And if you use speaker in the ESPHome config, you can't send a TTS audio sample. You can do that only with media_player
