I have a HA running on macOS using Virtualbox, with a Realtek ASUS USB-BT500 bluetooth dongle.
The Realtek dongle will be a problem
They are very crashy
HA tries to restart crashed dongles
But still for some it’s multiple times an hour and it takes a good few minutes to detect a fault and recover
The documentation has a list of supported dongles (see the “high performance” ones especially)

If that doesn’t work for you, I use inkbird to monitor inside my fridge and freezer.
And I use an esphome Bluetooth proxy to extend the range of my HAs Bluetooth to the fridge
(An ESPhome Bluetooth proxy is like having a remote dongle, and you can have multiple so you can get coverage in your entire house)
