The Matter integration for the Nest Thermostat is limited to the core basics only so you'll be missing features over the regular Nest integration. We're not sure if Google has any plans to extend the Matter integration, they might when Matter matures a bit more.
Matter does not use Bluetooth for communication, only for initial commissioning but that is not the case with your Nest Thermostat. So if there are any connectivity issues, you;d have to look at your WiFi signal.
