What is not clear to me, to be honest, is if one of this choice will have limitation between each other.
I've seen online that I can do that via HassOs (VM) or Assistant Core (Container)
Container doesn't have add-ons
Add-ons are just a way of running software, they're not magic
can you please give me some real-life example in order to understand better?

That's an MQTT broker
There's an add-on for those that use Home Assistant OS
that could be interesting for Sonoff and Shelly devices
For everybody else, including the billions of people who don't use HA at all, there's other ways of running Mosquitto
Add-ons are just software running in a container, with sprinkles for the Supervisor (HAOS)
There's pretty much nothing that you can do with add-ons that you can't do yourself. The same isn't true the other way around.
so HassOS should be fine, what I got from a quick online research is that it should be also easier to install and run for a first timer like me
As I said, it's not about "best" and simply about what you prefer.
You can (mostly) switch install method later anyway
would go with the simple as possible as I'm new to this world ๐
