Click the configuration in the integration page, and then you'll find dotsvertical next to configure where you can delete it

there are options for:
Reload
Rename
Download diagnostics
System options
Disable
Delete

And ... have you tried that last option?

Do I need to delete all 6 entries? Would deleting those delete the actual device(s) that's already in my HA environment running and functioning?

here's the message I see when I select the Delete option:

Delete Cam?
Its devices and entities will be permanently deleted.

so...does that mean that the actual device will be delete from HA?

I don't want to do that. How do I remove HomeKit Bridge without deleting the devices?

Ah.... so... I suspect you'll find it only deletes them from the bridge
