Might be worth a shot though, before trying to take this lamp apart. I have no idea how to. It might be glued shut basically.
I would confirm what the dimmer is on the inside (non-destructive disassembly just to take photos and observe). Look at part numbers and what kind of controller and voltage it uses. After the reverse engineering is done, it will be a lot easier to plan a solution. There is no point in cutting the 12v wire if you are not sure about the consequences.
It definitely is. In the canopy there's just a transformer providing 12v DC to the lamp
