Ok, so:
Accumulated for the grid consumption
Wh for the individual devices
HA will reset the consumption values through the UI so that it shows the hour / day / week use etc.

I haven't used grid consumption specifically but I'm fairly sure it's the same as the individual devices which yeah, the UI will show the graph broken down by day. My Humidifier has a total of 4kWh in the total sensor, but today shows 0 in the Energy dashboard because it has not been on today

The actual sensor you see in dev tools won't reset, but the energy dashboard will behave the way you'd expect: only showing the number for the usage from that day, not a graph that just keeps going up forever
