We put a high priced sherwin Williams paint on all the walls in one of our condos years ago. Long story but a couple days after finishing, it started peeling off the walls. Sherwin Williams came in and said it was their fault because can didn’t say it needed to be primed. They came in, sanded the entire place and repainted it. Free of charge. Put proxmox on it, and use Ubuntu as the main VM
Then I'll use a pair of my NAS 4TB drives in a ZFS mirror to store appdata
Then the rest I'll use mergerfs and snapraid

I run esxi, I connect zwave stick via usb, and I can pass that through. Also have setup virtual sound cards for my TTS as well.

The use case you mentioned goes against the practices of a Server. If you still want to use it as a desktop, it might not be right choice for you. I never needed that option. If I have a desktop Vm, I’d use it or access it like any other host.

I had a intel Nuc once running with fedora, which ran docker containers
On the same machine I had 2 VMs running simultaneously (Windows & MacOS)
which both had their own GPU (one Vega M and one Intel iGPU) and Display Connected
And I could still choose where I want to use my Keyboard / Mouse / Thunderbolt / whatever
this is not possible in esxi unfortunately
