Hey guys. New to the automation game. Bought a bunch of WiFi light switches and garage door openers thinking I was slick bc it worked with Google Home. But when I try to do some automation like lights coming on in the pantry when the door opens...I failed lol. I bought a smartthings hub and sensor, however that doesn't work with the WiFi switch. So now I am learning about z-wave, zigbee and the different hubs/apps. Any suggestions on where to start again, I've already wasted a decent amount of cash lol.

Background- IT System Admin Great with windows a little Linux. Not much coding or dev experience. Willing and ready to learn all that I can with what free time I get. Thanks in advance.

Mainly simple tasks for now like

Pantry Light on/off with door open and close.
Lights on outside during night hours
Nest doorbell notifications using lights/tablet on the wall.
Inside lights and locks automated at night for bedtime
Garage doors control/automation.
I'm sure this will grow.

I don't see any issues with your list except for the Nest doorbell notifications. I have not had success getting Nest to work with HA since Google got rid of the Works with Nest platform.

It was all my 4-way switches that didn't have the neutrals. I have 5 switches controlling my upstairs hallway lights.

I recommend ebay for buying the lutron. I found them $20-30/ea cheaper than amazon and they are NIB. I bought the initial stock on Amazon though to try it out and see if I like it so I can return them if I don't.
