In most cases, a single phone jack was replaced with 2x RJ45 🙂

@midnight adder Any good electrician will happily pull cat6 cable for you. A lot of them prefer it to high voltage as it a hell of a lot safer to work with.
And while I understand the desire to do it yourself, it one of those jobs that someone with the right tools will do in minutes/hours while it might take you weeks. Which would you prefer? Spending days or weeks pulling cables on your own, or playing with all the possibilities that having proper structured cabling around the place gives? 🙂

(ft feet up a wall and such) The place is currently just turning the fans on and off at the breaker box and it stinks because they are grouped haphazardly and the labeling is so bad that people who have worked there for years can't tell you which fans are controlled by which breaker.
