What if there was a shop that had a rotating inventory, or an area with a rotating pool of encounters, and players could share their current selection with each other? Essentially what Animal Crossing does but it's an idea for making the most of peer-to-peer connection.

Well, I mean, how do you have any online functionality that doesn't benefit players? Trading would also be a massive advantage.
With a rotating shop, all this would do is let you change the selection quicker to buy what your friend found.
With rotating encounters, all you're doing is just rerolling the encounters faster for cosmic hunting, etc. You wouldn't put any exclusives in there, or at least that's not my suggestion.

I don’t like to have certain items not being available unless I have a friend who has them and that I have to share with them

I understand the intention behind accessibility, but rotating stock just gives offline solo players needless backtracking and constant time monitoring.

To add, the encounters may vary between day and night. That should be enough rotation.
