#How to change verison with paper

How can I chaange my paper server from 26.1.1 to 1.21.11 without the server stopping. on 26.1.1 and more would work and server would start but versions from 1.21.1 and lower wont wont like the server would stop. But all the mods would work on 1.21.11 and I really need help because I really need to record a clip for my youtube video.
