Signs Dissappearing

Hey y'all! I got a seriously weird bug, and I got no idea how to fix this! Would someone be able to help? So let me explain. I have a private creative server on 1.20.1 where I build with friends. We got a simple listen of plugins. Arceon (a worldedit extension), FastAsync Worldedit (basically just worldedit), Voxelsniper (for teraforming), and EssentialsX. We run PaperMC. The bug is strange, basically signs, banners, and other blocks with NBT data are dissappearing randomly. For the life of me I cannot find a pattern, cause, or reason. It will happen completely randomly in certain chunks. Sometimes ill have a few builds with plenty of signs and nbt blocks last for days / weeks, others will only stay for a few minutes. Its odd, cause the hitbox of the sign will stay, but visually it will go away and all text will dissappear. This ISN'T client side either. My friends have the SAME issue. I run quite a few clientside mods, but they run 0 mods and 0 texturepacks. So this is a version / serverside thing. 100% not client. I have tried everything. I tried removing my plugins, i've tried updating paper, ive tried literally all I can do. I have tried ruling out causes too. It affects the new hanging signs & pots too. When the bug happens to pots, the pot will stay but all the patterns will turn into the diamond pattern. For banners it will dissappear completely only leaving behind a hitbox. Its very odd. It ruins the fun for so many of my builds. Can someone help me out? Here is some screenshots of what it looks like on hanging signs and normal signs.
