I accidentally requested my account to be deleted when trying to do something else in Jagex's support system. It said I have 72 hours to cancel my request. I replied to the ticket asking for it to be cancelled but I'm kind of freaking out thinking it will be deleted without being able to contact anyone. Is this a manual or automated process?

Account deletion is done manually by Jmods, they will see your cancellation request and will act accordingly, so I think you can just chill it should be okay.
