The Teylers has a varied collection of scientifically related objects - from fossils through minerals and various instruments (measurement ones, not musical), as well as coins, some art, and currently an exhibition on mythical/unlikely creatures and cryptozoology

And De Cruquius is a technology museum with the world's largest steam engine (I think) that used to be a steam-driven pump, one of three, built to drain the Grote Haarlemermeer (the Great Haarlem lake); apparently also part of the European Industrial Heritage 😄

They have demonstrations of the machine in work - now hydraulically - and it's awesome, if you're into that, at least (I am; not least because of the Myst games 😂 )
