I know the latest versions use 1.12 formatting (or higher) so it doesnt work with 1.8,
how would I make a model like this, I'm open towards plugins but I'd like to to have to downgrade blockbench version :)

Blockbench does and never did support 1.8 for models.
however the only difference is for display settings, the models will still work, you'll just have to set how they are displayed in your inventory and hands on your own.

Like what the display things are called

#

I know head, chest, legs, feet, mainhand, offhand - but i need third person mainhand and/or offhand

#

if mainhand and third person mainhand is the same that is no problem

#

No worries I found the names in another json file, it worked - and thanks for clarifying :o

FAQ
Java: 1.8 Display

Some item display settings for Minecraft Java Edition worked differently in 1.8 compared to newer versions:

  • No distinction between left and right hand (so the displays are just called firstperson instead of firstperson_lefthand or similar).
  • Values for these slots are applied in a different way and aren't compatible.

Blockbench does not support these 1.8 display slots since they were already outdated for a few years when Blockbench first came out.

This mod mentioned here apparently lets you edit the display settings ingame (even for 1.8), but we can't officially guarantee anything since we didn't make the mod: #old-help-vanilla-java-block-item message
