#how to change model conditionally?

How can I change an entity's model based on a condition? A texture change would suffice, too. This would be like when a wolf is tamed, and it switches to a new texture. In fact, I'm using a wolf's behavior file as a template and I want to change my mob's texture or model when it is tamed.
