At the Start of my project when I select "Java Block/Item" it shows that I can export it as .json but at the end it doesnt let me, instead it shows "Export as glTF"

Well, you're in the wrong format.

"File > Project..." to see which one.

Ypi cam try "File > Cpmvert Project" but I'd expect parts of the model to break
