As long as you create split up faces split up the sections into smaller faces*, you can move their UV anywhere you want to use a certain part of the texture, so yes.
and how do i do that? im completly new to this and dont understand
I recorded a short video to show the process.
The big cuboid I made was not split up into square faces, so I stretched their UV, which resulted in an uneven pixel resolution.
If you want to respect the proportions, just avoid stretching the UV of your faces too much. You can also model evenly sized faces in the first place, but it's not really an issue, you can always occupy more or less space on the texture while keeping the proportions correct.
Using the Snap UV to Pixels tool helps a lot to align the UVs with the pixels, if you have faces that don't match the resolution.
