Hi, all my objects are in the Bone folder and the folder has a centred pivot (it rotates perfectly in place) ...but when I try to capture a gif, the model always rotates on the same edge (not centred) no matter where I set the pivot. What have I done wrong?

The GIF rotates around the camera center, not the model center. You can recenter it by clicking View > Center View on Selection
