Hello, sorry if this is an obvious question, but I'm currently using a plane mesh to hold a reference texture for me to model to. The problem I'm having is I'm not sure what the size of the plane is (the menu is disabled according to Blockbench) and it's hard to make sure it's the correct aspect ratio. Is there a way to set the size or find the size of the plane mesh? Alternatively, am I using a bad tool for my purpose and is there a better way to show 2D picture references in the correct size in blockbench to help you model with?

Meshes do not have the size fields because they don't follow the standard l*w*h formula.
Nevertheless, you don't need an element to display your reference picture.

To load a background image into Blockbench (for reference or as a wallpaper), bring up the context menu of the preview window. To do this, right click the background of the preview or use the menu button in the top right corner. In this menu, you have the option to load and manage backgrounds.
