So, Y’know how you rename a .jem model to, let’s say, rabbit.jem so it replaces it? I’m wondering if you can use multiple .jems that all replace the rabbit, but not as a random chance, like a whole new spawn egg basically

yes, that's a new, experimental feature in OptiFine HD U I1 pre2, not sure if it's still there in the newer version or the release version later on.
