Backup your data and start again with partitioning, but instead use something like GParted for dealing with Linux partitions, not something easeus.

Backup everything. Backups should always be done whenever undertaking such tasks.

Once you have that done, reconfigure the bootloader and hope that your Linux installation is still bootable.

Find a suitable sized storage medium, and use something like Clonezilla.

No. You lose data if you do that, and you stand to gain no knowledge by doing that.
